EFO RIRO (Rich Vegetable Stew)

Efo Riro soup Nigerian recipe

REQUIREMENTS

- 3 cooking spoon palm oil
- 1 small size onion (chopped)
- 10 pepper
- 10 medium tomatoes
- 1 big size onion
- 1 medium smoked fish
- 6 snails
- Dry shrimps
- Assorted meat (liver, kidney, tripe, heart, intestine)
- leafy vegetable( spinach or water leaf)
- locust bean seeds(iru)
- 2 Cubed seasoning

What you do

Grind the big onion, pepper and tomatoes.

Wash and cook the meat until tender.

Rinse the iru in water to remove the stone and sand.

Heat oil in a sauce pan (do not bleach), add the chopped onions and fry.

Add the ground ingredients, iru and cubed seasoning, leave to fry.

Add the fish, boiled snails & shrimps and meat parts and make sure most is immersed in the pepper.

Leave to simmer for 10 - 15 minutes.

Add the vegetable to the sauce and simmer until cooked.

Serve with Pounded yam, Eba, Amala.
